Easy yet delicious beef burgers that are sure to match any of those you’ve eaten at a restaurant but at a fraction of the price!

Serves: 2 Time: 20 minutes
Ingredients: 400g minced beef (20% fat works best), 2 sesame seeded brioche burger buns, 4 rashers or smoky streaky bacon, 4 slices of American cheese, shredded iceberg lettuce, red onion, 2 tbsp tomato sauce, 2 tbsp mayonnaise, 2 tbsp mustard, 1 tsp gherkin jar vinegar, 2 gherkins, salt and pepper.
Method: 1.) Form the mince into 4 balls around 100g each. 2.) To make the sauce, combine the tomato sauce, mustard and mayonnaise mixing well. Add in 1 gherkin, finely diced, 2 tsp gherkin vinegar, stir well and set aside. 3.) shred the lettuce, slice the red onion and 1 gherkin and set aside. 4.) Lightly toast the inside of the brioche bun in a dry frying pan over a medium heat and set aside. 5.) cook the streaky bacon under the grill until crispy. 6.) Place 1 burger ball into a frying pan, with a little oil if needed, season with salt and pepper and place a square of greaseproof paper on top, pressing (smashing) the burger down until flat with the base of a small saucepan. Remove the greaseproof and cook for 1-2 minutes on each side. Add a slice of cheese – add a small amount of water (1 tsp if needed) and place a baking tray on top of the frying pan for 30-40 seconds. This creates steam and melts the cheese wonderfully onto the top of the burger. Repeat with the second burger. 7.) Add sauce to each half of the burger bun, adding the lettuce, onion and gherkins before topping with your two smashed cheeseburgers and 2 slices of crispy bacon. Serve with fries or chips and enjoy!
